Leprechaun Crunch

Hey All -

I'm not sure if leprechauns like sweet stuff, but my boys and I sure do.  So, in the spirt of St. Patrick's Day I thought my little guy and I should head to the grocery store and pick up some ingredients for White Chocolate Snack Mix:

  • a medium bag of M&M's
  • pretzels
  • peanuts
  • plain Cheerios
  • rice or corn Chex cereal
  • 2 bags of white chocolate morsels  

The only thing we added to our shopping list was food coloring.  I thought we could take the existing recipe, add some green food coloring, and call this stuff Leprechaun Crunch.  

Girls, this is my kind of recipe, all you have to do is add two cups of all the ingredients (except the white chocolate chips) to a bowl.  It's so easy, that I recruited my little guy to be my assistant.

He was in charge of adding the ingredients to the bowl.

But...he was VERY distracted by the presence of M&M's.  (So was I.)

Pretty soon, we ended up with a bowl of this.

In a microwave safe bowl, we added the two bags of white chocolate chips.  Then, in small increments, I melted them in the microwave - stirring often.

Now, it was time to turn this stuff into Leprechaun Crunch.  All we did was add a lot of green food coloring and stirred.

Then, we poured the melted green chocolate over the dry ingredients and once again...stirred.

Finally, we poured it all onto some wax paper to cool.

This stuff is so yummy, that I knew I should probably give some of it away.  You know, share the calories love.  So, I picked up some cute jars at the Dollar Store and grabbed some ribbon from my stash and some green fabric that Mrs. G. shared with me.

I just tied the fabric around the jar and started handing them out to friends.

This recipe is so super easy that I'm thinking I'm just going to add different colored food coloring for each holiday - pink for Easter Bunny Crunch, blue for Fourth of July Crunch, orange for Jack o' Lantern Crunch, and red for Brian Williams's birthday (he told me red is his favorite color)....oh, the ideas are endless!

Oh and one more thing...Mrs. Presley has kindly offered some free green st. patty's day labels.  There's one sheet for friends and one for teachers. 

These tags are super cute and can be added to some homemade leprechaun crunch or some green soaps or a bottle of Guinness (well, maybe not the last one for the teachers).  Thanks Mrs. Presley!

Note from Mrs. Kelly:  As the recipients of one of these sweet jars, I can tell you a.) it is delicious and b.) it is accurately called leprechaun crunch because when I awoke the next morning the crunch was gone.  Leprechauns!  And, thanks Mrs. Presley.  Those labels are awesome as per usual.  :)

Note from Mrs. Gosling:  The leprechaun crunch was DELISH!  Actually,  I was only allowed a small morsel of it.  Once the boys sniffed it out (Boy #3) it didn't stand a chance.  Thanks!!!
